Ingredients

Salmon

  • 4 6-ounce salmon fillets
  • 2 teaspoons lemon juice
  • 1⁄8 teaspoon salt
  • 1 scallion, chopped

Blueberry Basil Sauce

  • 1 ½ cups blueberries
  • 2 cloves garlic, crushed
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • ¼ teaspoon salt
  • 2 – 3 tablespoons fresh chopped basil

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with aluminum foil and place the salmon fillets on top. Sprinkle with lemon juice and salt. Bake about 20 minutes or until the fish flakes easily with a fork.
  3. After plating the salmon, top with the blueberry basil sauce and sprinkle with chopped scallions.

Blueberry Basil Sauce Instructions

  1. Place all ingredients except the basil into a saucepan and bring to a boil over medium-high heat. Once it starts to boil, reduce the heat to medium-low and cook uncovered for about 10 minutes until the sauce is thickened. Stir frequently to prevent sticking.
  2. Remove the pan from the heat and stir in the basil.

Recipe Tip

Serve your leftover sauce with goat cheese and crackers, smear a small bit on a turkey sandwich, or add a dollop to a mixed green salad with a squeeze of fresh lemon.
