Salmon with Blueberry Basil Sauce

Ingredients
Salmon
- 4 6-ounce salmon fillets
- 2 teaspoons lemon juice
- 1⁄8 teaspoon salt
- 1 scallion, chopped
Blueberry Basil Sauce
- 1 ½ cups blueberries
- 2 cloves garlic, crushed
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons honey
- ¼ teaspoon salt
- 2 – 3 tablespoons fresh chopped basil
Instructions
Salmon Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with aluminum foil and place the salmon fillets on top. Sprinkle with lemon juice and salt. Bake about 20 minutes or until the fish flakes easily with a fork.
- After plating the salmon, top with the blueberry basil sauce and sprinkle with chopped scallions.
Blueberry Basil Sauce Instructions
- Place all ingredients except the basil into a saucepan and bring to a boil over medium-high heat. Once it starts to boil, reduce the heat to medium-low and cook uncovered for about 10 minutes until the sauce is thickened. Stir frequently to prevent sticking.
- Remove the pan from the heat and stir in the basil.
Recipe Tip
Serve your leftover sauce with goat cheese and crackers, smear a small bit on a turkey sandwich, or add a dollop to a mixed green salad with a squeeze of fresh lemon.
